In our Porridgetrends 2019, we already introduced you to the "Baked Porridge". The baked porridge can easily be converted into a to-go version in the form of muffins. To prepare the baked porridge from the muffin sheet, mix 100 grams of your favorite porridge base with 2 eggs (or egg substitute), 2 tsp baking powder, 100ml milk of your choice, 2 tbsp nut butter, fruits, and a sweetening option of your choice, then bake the muffins at 180 degrees for about 25 minutes.

Filled puff pastry bags from the muffin sheet
You can easily prepare another breakfast idea by flipping over the muffin tin (or silicone muffin tin). This allows you to prepare puff pastry bowls without any problems. For this, you need some puff pastry, which you cut into square pieces and place over the muffin sheet bulges so that small bowls are created.
Bake the puff pastry according to the package instructions in your oven. When filling the puff pastry bags, there are no limits to your imagination! For example, you can fill them with yogurt, berries, and your favorite
granola
or porridge. The best thing about the recipe? The bowl for your breakfast can also simply be eaten with it.
3. Oatmeal Cups
Delicious breakfast bowls can also be easily prepared from oatmeal . For the oatmeal cups, first crush two ripe bananas and then add about 100g of honey. Then add 125g of oatmeal and 1 teaspoon of cinnamon and mix everything well.
Add 2 tablespoons each of the finished dough to your muffin tins and press them firmly with your fingers so that a trough is formed in the middle. The oatmeal cups are then baked in the oven at 175° for 10-12 minutes. After they are done, you can take them out of the shape and fill them as you like. For example, you can fill them with yogurt and berries or with some yogurt and crunchy.
4. Hearty porridge muffins with spinach and feta
If you like hearty breakfasts, we recommend spinach feta muffins with porridge. For this muffin variant, you need about 300g of spinach, 200g of feta, 100g of oatmeal or a hearty porridge of your choice, 150g of flour, 2 teaspoons of baking powder, 2 eggs, 60 ml of olive oil, 250ml of milk or plant drink, and some salt and pepper.
First, thaw the spinach and remove the excess liquid. Then mix the spinach with the eggs, olive oil, and milk, and season with salt and pepper. Next, mix all the dry ingredients and combine them with the moist ingredients. Finally, carefully lift the feta cubes into the muffin dough. The muffins are then baked in the oven at 200 degrees for 15 minutes.
5. Good morning Muesli Muffins
Our good morning muffins make for a really great start to the day. With porridge as the main ingredient, these muffins are a good alternative to the usual porridge. They can be wonderfully prepared on the weekend and are also super tasty.

Recipe: Good Morning Muffins
Ingredients
- 150 g Verival coconut apricot porridge
- 2 large eggs
- 150 ml natural yogurt or plant-based alternative
- 50 ml vegetable oil
- 100 g applesauce
- 4 tbsp honey
- 150 g wholemeal spelt flour
- 1 tsp. baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
Preparation

Preheat the oven to 150°C.

Mix Verival coconut apricot porridge, wholemeal spelt flour, baking powder, baking soda, and cinnamon in a mixing bowl.

In a second bowl, mix eggs, natural yogurt, vegetable oil, applesauce, and honey.

Mix the dry ingredients with the wet ingredients.

The dough should not be stirred too much, only until all the ingredients are moist.

Line a muffin tray with muffin tins and carefully fill with a spoon about ¾ full.

Bake muffins in the oven for 20-25 minutes.

Allow to cool and enjoy!
6. Crumble with a twist – The Crumble Muffin
