Strawberries, blueberries, blackberries, currants,... – the variety of delicious berries in summer is simply amazing. And the range of recipes for what you can create with these fruits is just as diverse. Whether you use them as a topping for your porridge and sweeten your healthy breakfast or make jam – they always taste delicious.
But berries can also play a crucial role in baking. In this berry tart recipe, we used the Verival blackberry porridge for the shortcrust pastry and included plenty of berries.
The fruity tart

Berry porridge tart
Ingredients
Dough
- 150 g butter
- 80 g dark chocolate , e.g. with 65% cocoa
- 60 g Verival blackberry porridge
- 180 g spelt flour
- 150 g brown sugar
- 1 pinch of salt
- 60 g ground hazelnuts
Cream
- 4 eggs
- 60 g sour cream
- 160 g cream cheese
- 80 g berry jam , e.g. strawberry, forest fruit, etc.
Covering
- 300 g fresh berries
Preparation
For the dough

Melt the butter. Chop the chocolate. Mix flour, porridge, sugar, salt, chopped chocolate and ground hazelnuts. Add melted butter and use the kneading hook of the food processor or hand mixer to create a crumbly dough.

Grease a cake tin (Ø 24 cm). Distribute the dough in the mould and press evenly with your hands, forming an approximately 2 cm high edge of dough all around. Then chill the dough for 30 minutes.

Preheat the oven to 180 degrees convection.
For the cream

Mix the eggs, sour cream, cream cheese, and jam into a smooth mixture. Then spread the mixture on the bottom of the tart.

Bake the dough in the preheated oven on the second rail from the bottom for 30-35 minutes. Remove and allow to cool in the mould for about 10 minutes.
For the topping

Wash the berries and pat them dry. Spread them over the tart.

Which berries are suitable for the topping?

Whether pleasantly sour or sweet – which berries you want to use to top the cake is entirely a matter of taste. However, it's best to pay attention to which berries are in season or opt for deep-frozen berries. Properly frozen, berries can last a long time.
Due to their high water content, fresh berries mold relatively quickly as soon as they are minimally damaged. Therefore, when purchasing berries, you should ensure that they are plump, dry on the outside, without dents, and free from mold. Berries are sensitive to pressure.
How healthy are berries?
Berries are good for health in general and beneficial for memory and heart health in particular. The following applies: the darker a berry is, the healthier it is. The plant substances, which contribute to the rich color of these small fruits, generally have an anti-inflammatory effect and bolster the immune defense.
In addition, berries contain water-soluble plant substances that provide antioxidant benefits. These substances help repair damaged cells and protect the body from harm caused by free radicals.
Because they are largely composed of water, berries are also low in calories.
So berries not only taste delicious, but they are also healthy and can be combined according to your preference.
